All commercial kitchens will require some form of refrigeration. The ComSOP also does not require inspectors to inspect or test refrigeration. These may be complicated systems that require specialized knowledge. In any case, the inspector should take inventory of what is present. Some also choose to report on the refrigeration system’s visible condition. This video takes a look at the refrigeration system in a commercial kitchen and the condensers on the roof. The condensers are installed in a N+1 configuration described in the video.
