Commercial Kitchen Inspection Scope

Commercial kitchens present higher fire and life safety risks than residential kitchens due to extreme heat output, high-volume grease usage, and specialized equipment in confined, high-traffic spaces. Due to these factors, the ComSOP outlines a specific visual inspection scope for commercial cooking areas, separate from the life safety inspection scope that applies to all commercial buildings.

Common Commercial Kitchen Fire Protection Components

Below is a review of the key highlights from the commercial kitchen inspection video, including the systems, components, and baseline inspection points outlined in the ComSOP.

  • Fire Extinguishers:
    • Definition: A handheld, portable active safety device containing an extinguishing agent used to control or extinguish small fires. Fire extinguishers are classified by the type of extinguishing agent they contain, which corresponds to the class of fire they are designed to combat.
    • ComSOP scope: Check for the presence of portable fire extinguishers, and any inspection tags or labels. Note the lack of a Type K portable fire extinguisher near commercial cooking equipment using cooking oil or animal fat.
  • Manual Actuator:
    • Definition: A manually operated fire protection device that allows occupants to activate a fire suppression system without automatic detection. Also referred to as a manual pull or pull station.
    • ComSOP scope: Note the lack of a manual activation device near commercial cooking equipment using cooking oil or animal fat. If present, verify it is located near the means of egress from the cooking area, mounted 42 to 48 inches (1.07 to 1.22 m) above the floor, positioned 10 to 20 feet (3.05 to 6.10 m) from the cooking equipment, and clearly labeled to identify the cooking hazards it protects.
  • Fire Suppression System:
    • Definition: A system designed to detect and suppress fires automatically through smoke, heat, or flame sensors. It discharges a suppression agent through a network of piping and nozzles, typically over the protected cooking equipment.
    • ComSOP scope: Fire suppression systems are required for appliances that produce grease-laden vapors. Verify the presence of a fire suppression system, including drop-down pipes, nozzles that discharge the suppression agent, and a manual actuator mounted on the wall. The nozzles should be installed within all Type I hoods and positioned to protect the cooking surfaces. Check for obstructions and grease buildup.
